This wine is a blend made from the great parcels owned within the appellation by the Château des Jacques, namely Carquelin, Rochegrès, Champ de Cour, Thorins and La Roche. The granite soils of each particular parcel lends individual nuances to the wine.

Vinification

Picked and sorted by hand, then de-stemmed, the grapes macerate slowly over the course of three or four weeks. Indigenous yeasts are used throughout the fermentation period, and extraction by means of both plunging and pumping over takes place on a regular basis.

Maturing and bottling

The wines are aged in our historic cellar for 10 months, a period spent in oak barrels, 40% of which are new and 60% of which are second use. The oak used to make the barrels comes from the forests of Alliers, the Limousin and the Nivernais.

Tasting / Wine and food pairing

Rich and powerful, these wines display the essence of their appellation with elegant fruit, supple tannins and plenty of freshness. It's a versatile food wine, and works well with meat, both white and red, fish, cheese and vegetable dishes.

Conservation

The wine needs a year or two to reach its peak, and can then age comfortably for several decades.

The Vintage

Winter was cold and dry, with frequent frosts. Early spring was not promising, with heavier rainfalls than the average over the course of the past 30 years. Nevertheless, the temperatures were gentle enough to promote budbreak. Temperatures climbed dramatically towards the end of Mai, and June was sunny and hot, with temperatures averaging 3ºC above the norm. July continued in the same vein, with veraison kicking off towards the end of the month. The same month saw a virtual drought, with rainfall of 20% compared to the average. However, the summer temperatures of 2005 were more moderate than those of 2003. By September, temperatures were 2.5ºC above average, but the night temperatures remained cool. This heat, in combination with the lack of rainfall, favoured the ripening of perfectly healthy grapes, and this has resulted in an exceptional vintage, judged by many to be the best for many decades. Harvest began on 13 September.
