The 'En Papolet' parcel is situated on a vein of quartz, which lends a profound streak of minerality to the wines, as well as tautness and precision.

Vinification

Once the grapes are de-stemmed, indigenous yeasts are used throughout the fermentation period. A maceration period of three or four weeks ensures that extraction is both gentle and complete.

Maturing and bottling

Our Chenas is matured for 11 months in oak barrels stored in our cellar. The wine is then racked of its lees, filtered gently, then bottled towards the end of summer.

Tasting / Wine and food pairing

Taut and precise, this wine is an admirable match for a number of dishes, from red meats and game to cheese and charcuterie.

Conservation

Depending on the vintage, this wine needs between one and three years to reach its peak, and can then age comfortably for several decades.

The Vintage

After a mild January 2012 a cold snap arrived dominating the first two weeks of February. The first sign to indicate that the future crop this year would be small. March was somewhat warmer favouring an early bud burst of the vines. Then again April, rather cool and humid with hardly no sun, calmed down the general growth of the vine and confirmed the path of a hectic and unpredictable year in terms of climatic conditions. Some rain followed, including hail in particular spots. Overall temperatures were lower than average compared to previous years and this continued into the summer . Fortunately with the arrival of August and the first two weeks of September the weather warmed up with almost no rain. This encouraged a slow maturation of the grapes and a very healthy situation. Harvest started on September 17. In a nutshell, 2012 is somewhat a "late" vintage and much smaller than usual. Grapes were nicely ripe and the juice wellbalanced despite hectic weather conditions: a very demanding vintage for the growers.
